Dongnae Pajeon (pan-fried green onions with seafoods, Dongnae style)
This is a specialty of Dongnae town that is well-known for variety of seafoods. The mixture of wheat flour and rice flour is kneaded with anchovy broth and eggs. Then green onions and seafoods are added and pan-fried. It is served with soy and vinegar sauce.
* Green onion is rich in calcium, phosphorus, iron, and vitamins. Vitamin A and vitamin C are rich in the green part. In oriental medicine, green onion is known to make the body warm and to help gastrointestinal functions.
Ingredients
flour 2 C, regular rice flour 1 C, 2 eggs, anchovy broth 2 C, hard-shelled mussel 100g, spring onions 200g, salt, oyster 100g, clam meat 100g, vegetable 1 C
Directions
1) Mix wheat flour and rice flour well.
2) Trim spring onion, cut into 15cm length and pound roots with knife.
3) Stir eggs in anchovy broth with a bit of salt. Add wheat flour and regular rice flour to make liquid thin.
4) Wash oyster, clam meats, and mussels in salt water. Mince half of it and season with salt.
5) On a greased pan, pour one ladle of dough evenly and arrange seafoods on it and cover them with small amount of dough.
6) Cook one side and reduce the heat. Then turn it over and cook the other side. Serve with vinegar & soy sauce while it is hot.
