Hobakseon (steamed zucchini with meat)

Young zucchini is incised; thin-sliced strips of beef, shiitake mushroom, and pan-fried egg are inserted into them. Then, it is steamed with beef broth and served with mustard sauce or soy & vinegar sauce.


Ingredients

1 young zucchini (pumpkin), beef 150g, 2 shiitake mushrooms, manna lichen mushroom 5g, 1 egg

Beef & mushroom seasonings: soy sauce 2 Tbsp, sugar 1 Tbsp, chopped green onions 4 tsp, chopped garlic 2 tsp, sesame oil 2 tsp, crushed sesame seeds 2 tsp, black pepper tsp

Liquid seasoning:salt 2 tsp, soy sauce 2 Tbsp, sugar 1 Tbsp, beef broth 4 Tbsp


Directions

1) Prepare thin and tender zucchini. Cut in half lengthwise and make incisions three times diagonally to six cm size. Remove the inside. Salt down in salt water and drain.

2) Cut the beef and shiitake into thin slices and Season.

3) Moisten the manna lichen mushrooms. Remove the moss and dirts. Slice into fine strips and stir-fry.

4) Pan-fry the egg to make yellow and white egg strips.

5) Stuff the prepared ingredients into salted zucchini. In a pot, put soy sauce, salt, sugar, and beef broth together. Upon simmering, add the stuffed zucchini and boil. During boiling, sprinkle the liquid on zucchini occasionally to make the seasonings penetrate.

6) After cooking, put on a plate and garnish with egg strips. Serve with mustard sauce or soy & vinegar sauce.
